Almond Butter & Banana Split

One day while browsing pinterest I came across this recipe.

It’s called Almond Butter & Banana Sandwich.  I’m calling it a split, as well it’s more like a split than a sandwich.

When I saw this recipe I thought to myself, “wow this is really simple and easy, and best part I have all the ingrediants already.”

I did have to modify it to make it Whole30 approved, and if anything I think the modification is better. The version I will give you is my modification. But if you would like the original recipe click here.

Almond Butter & Banana Split
Recipe type: Breakfast, Dessert
Serves: 1
  • 1 small/medium banana
  • 1 TBSP almond butter
  • 1 Tsp Tahini
  • ¼ c blueberries
  • 1 Tsp dessicated coconut
  1. Peal the banana, and slice lengthways
  2. Mix the almond butter and tahini, and spread on the banana
  3. Cover with blueberries
  4. Sprinkle with dessicated coconut
Blueberries can be fresh. I used frozen ones, and allowed them to defrost.
If you don't have blueberries try it with dried fruit.
If using a larger banana increase the size of almond butter/tahini
You can use sunbutter as an alternative to almond butter

My son thought what I was eating was gross.  I told him “You can’t say it’s gross when you’ve never tired it before”.  He then had a bite, and then proceeded to wanted his own or the rest of mine.  This is happening just as my daughter is eating the last banana.  Luckily she only ate half, so I made a serving for him with a half eaten banana.  He didn’t care, he loved it.
